Berry-Smash Muffins

Berry-Smash Muffins
Taken from Gold Medal kids cookbook
Tested by DC, DH, & YCGP

Ingredients:

1 2/3 cups fresh or frozen strawberries
2/3 cup sugar
1/3 cup vegetable oil
2 eggs
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon

Directions:

1.  Heat oven to 425*.  Grease bottoms of 12 muffin cups.
2.  Slightly smash strawberries in large bowl, using fork.  Stir in sugar, oil, and eggs until mixed.  Stir in other ingredients just until moistened.  Spoon batter into muffin cups.
3.  Bake 15-18 minutes or until lightly brown or toothpick poked in center comes out clean.  Cool 5 minutes.  Makes 12 muffins.

What I did:  I used frozen mixed berries, since I didn't have just strawberries.  Zapped them in the microwave and smashed them (the girls loved watching Mommy do this).  As with most child-friendly recipes, the girls took turns putting the ingredients in the bowl!

What would I do differently next time:  NOTHING!  I think I will stick with the mixed berries too!  DELICIOUS!
